Raw Salted Chocolate

This is a super quick and ‘healthier’ take on chocolate. I love having a little stash of in my freeze when the urge to something sweet kicks in, and find that a few small pieces is enough to satisfy a desire for something sweet without spiking my blood sugar levels and leaving me wanting more.

Aside from taking no more than 10 minutes to make, this is dairy-free & made with only 5 ingredients. One of the primary ingredients is raw unsweetened cocoa powder, which boasts a high concentration of flavenoids, which are plant-based substances that function as effective antioxidants. According to a recent study from the American Journal of Clinical Nutrition, the flavenoids in cacao can help relax the muscles in blood vessels and improve blood flow and healthy blood pressure. These same antioxidants are also known to protect against cell damage by destroying free radicals, which explains why cacao is sometimes referred to it as an anti-ageing food.

Besides flavenoids, this chocolate is also a good source of many B vitamins, zinc & magnesium, all of which support healthy energy production. The coconut oil gives it a smooth creamy texture with a delicious hint of coconut flavour. 

Ingredients

  • 1/4 cup (4 tbsp) extra virgin coconut oil (preferably soft, not completely melted)
  • 3 tbsp raw unsweetened cacao/cocoa powder
  • 1-2 tsp raw honey (or 4 drops 100% pure stevia 
  • pinch sea salt 
  • 1 tbsp almond butter (optional)

Instructions

Combine all ingredients in a small bowl and mix with a spoon until mixture is completely smooth. Spread mixture onto parchment paper, drizzle a little sea salt on top & freeze for 5-10 mins.

PLEASE NOTE – this best served straight out of the freezer and stored in a bowl in the freezer as it will melt.
