 2. Chia Seeds: I absolutely love this healthy ancient super-seed and use it almost every day. Nutritional benefits of chia seeds include omega 3 fats, fiber, antioxidants, calcium & even protein. And due to their gelatinous nature, they also help absorb & eliminating toxins from the body. They are a brilliant addition to everything from smoothies & muesli to baby food, salads & soups. Adding chia seeds to a smoothie and blending them breaks down their consistency and adds great bulk to an otherwise thin smoothie mix. You can also make a great chia pudding by simply adding almond milk, vanilla or cinnamon and leaving it in the fridge overnight. Again, blending this may give it a nicer consistency for those who don’t enjoy the seedy texture.

4. Homemade Pistachio PestoThis pesto is from Linda Wagner’s blog. I made it for the first time tonight with chicken & a Quinoa salad. It is great & a such a good way to perk up a plain chicken breast.
