Today is a good day. Today is the day I’m back in my favorite pre-pregnancy jeans(!) The Helmut Langs, that for 11 long months have been starring at me with a lonely glare from the shelf in my closet are finally back in business! I celebrated this with a new breakfast creation; chia avocado smoothie parfait. Something I’ll definitely be making again.
High in healthy fats, protein & fiber… this is a perfect, yet light way to start to the day.
Chia Avocado Smoothie Parfait
- ¼ ripe avocado
- ½ ripe organic pear, cut into small pieces (if not ripe then you can grate it instead)
- 3 heaped tbsp organic plain Greek yogurt
- 1 tbsp fresh lime juice
- ½ tsp vanilla extract/powder
- 2-3 drops stevia or 1 tsp raw honey
- 1-2 tsp chia seeds. (Optional) 2 tsp chia seeds add an extra 3.5 gm fiber
Simply mix all ingredients together in food processor (a high speed blender will work too), scraping down the sides as many times as needed until getting a completely smooth consistency. Pour mixture into a glass or bowl. Then top with freshly sliced strawberries & raw almond flakes.
I’m loving avocado at the moment, especially when used in smoothies & desserts where it adds an amazingly creamy texture. It is full of heart healthy monounsaturated fats and provides a good dose of f the antioxidant, vitamin E, which helps enhance the firmness & elasticity of our skin while also protecting against skin cell damage.
